Preheat oven to 350°</p>
<p><em>Graham Cracker Crust</em></p>
<p>1-1/4 cups	graham cracker crumbs<br />
3 tablespoons	sugar<br />
¼ cup	unsalted butter, melted</p>
<p>Crumble one packet of graham crackers into the bowl of a food processor. Process until you have fine crumbs. Add the sugar and pulse to mix. Pour the butter through the feed tube while the machine is running. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan. Set aside.</p>
<p><em>Key Lime Filling</em></p>
<p>24 ounces	cream cheese<br />
¾ cup	sugar<br />
5 tablespoons	sour cream<br />
5 teaspoons	flour<br />
4	extra-large eggs<br />
1	egg yolk<br />
½ cup	frozen limeade concentrate, thawed<br />
¼ cup	lime juice<br />
1 teaspoon	vanilla extract</p>
<p>In a large bowl combine cream cheese, sugar, sour cream, and flour. Beat with an electric mixer on low speed till smooth. Add eggs and egg yolk, one at a time, beating well after each addition. Beat in limeade concentrate, lime juice, and vanilla extract. Pour the cream cheese mixture over the crust.</p>
<p>Bake at 350° for 15 minutes. Lower the temperature to 200° and bake for 1 hour and 15 minutes or till the center no longer looks wet or shiny. Remove the cake from the oven and run a knife around the inside edge of the pan.</p>
<p><em>Honey Lime Glaze</em></p>
<p>½ cup	frozen limeade concentrate, thawed<br />
4 teaspoons	lime juice<br />
1 tablespoon	cornstarch<br />
1 tablespoon	honey<br />
1 teaspoon	finely shredded lime peel</p>
<p>Pour all ingredients into a microwave-safe bowl and stir with a whisk. Microwave for 2 minutes at 75% power. Stir. Microwave for another 2 minutes at 75% power. The mixture should be thickened, bubbly, and translucent in appearance. Pour over the cheesecake. Chill till serving time. Makes 12 to 18 slices.</p>

1  tablespoon dill (1 teaspoon dried)<br />
1  teaspoon kosher salt<br />
¼  teaspoon pepper<br />
½  cup rice wine vinegar<br />
3  scallions, sliced thin<br />
3  medium English cucumbers</p>
<p>Stir sugar, dill, salt and pepper into the vinegar in a medium bowl until dissolved. Add the scallions and stir.</p>
<p>Slice  your cucumbers in half lengthwise. Run a small melon baller along the  inside to remove the seeds. Lay each half flat side down and slice into  ¼-inch-thick pieces. Add the cucumbers to the bowl and stir.</p>
<p>Serve chilled.</p>

<p>Use rigatoni (large tubes) rather than elbow macaroni, so the cheese  sauce seeps inside the noodles. Then I kicked it up a notch by adding smoked ham.  The ham adds some color, texture and smokiness.</p>
<p>This is my favorite  comfort food when I&#8217;m stressed.  I make a big batch so I have leftovers  for lunch all week.</p>
<p>Add a green salad and a glass of white wine and you&#8217;ve got the  perfect meal.  Enjoy!</p>

<p>Preheat the oven to 375 degrees.</p>
<p>Bring a large <a href="http://www.amazon.com/gp/product/B0000UV01S?ie=UTF8&amp;tag=renegnetwom0b-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000UV01S" target="_blank">pasta pot</a> of water to a boil.  Add a couple tablespoons of salt and the rigatoni and cook according to the directions on the package, 8 to 10 minutes. Drain well.</p>
<p>Meanwhile, microwave the milk in a microwave-safe bowl on High for 4 minutes. Melt the butter in a <a href="http://www.amazon.com/gp/product/B000TGAZ4Q?ie=UTF8&amp;tag=renegnetwom0b-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000TGAZ4Q" target="_blank">large (4-quart) pot</a> and add the flour.  Cook over low heat for 2 minutes, stirring with a whisk.  While whisking, add the warm milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gouda, Cheddar, kosher salt, pepper, and nutmeg. Add the cooked macaroni and stir well.</p>
<p>Heat the ham steak on high in a <a href="http://www.amazon.com/gp/product/B000ND1WMO?ie=UTF8&amp;tag=renegnetwom0b-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000ND1WMO" target="_blank">non-stick skillet</a> for 1 minute on each side, or until browned. Cut the steak into a 1/2 x 1/2&#8243; dice. Add the ham to the macaroni and stir well.</p>
<p>Spray a 3-quart baking dish with nonstick spray. Pour the macaroni mixture into the baking dish.  Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni browned on the top.</p>

<li>1 teaspoon minced garlic (about 3 medium      cloves)</li>
<li>1 teaspoon minced fresh ginger</li>
<li>2 teaspoons honey</li>
<li>½ teaspoon toasted sesame oil</li>
<li>¼ teaspoon pepper</li>
<li>4 teaspoons toasted sesame seeds</li>

<p>1. Combine garlic, ginger, honey, sesame oil and pepper in small bowl; set aside.</p>
<p>2. <p>Sprinkle with powdered sugar and drizzle with maple syrup.</p>

<li>4 cups chicken broth</li>
<li>1 teaspoon lemon pepper</li>
<li>2 teaspoons Worcestershire sauce</li>
<li>1 teaspoon chili powder</li>
<li>1 teaspoon ground cumin</li>

<li>4 tablespoons all-purpose flour</li>
<li>1/2 cup water</li>

<p>In a small bowl, combine the flour with the water and whisk it into the soup.  Bring the soup back to a boil and simmer for 5 minutes.  Add the chicken and simmer for 5 minutes or until it is just cooked through.  Stir in the sour cream and salt and pepper to taste, and garnish each portion with the tortilla strips and the coriander, if desired.</p>
<p><em>Note</em>:  I like to add a can of corn and a can of chili beans to make a heartier soup.</p>

<li>4 corn tortillas cut into 1/4-inch strips</li>
<li>Nonstick vegetable oil spray</li>
</ul>
<p>Preheat the oven to 400°F.</p>
<p>Arrange the tortilla strips in one layer in a baking pan sprayed with vegetable oil.  Bake them in the oven for 10 minutes or until they are lightly toasted and crispy.  Sprinkle lightly with salt, if desired.</p>

<li>1/3 cup extra-virgin olive oil</li>
<li>2 tablespoons balsamic vinegar</li>
<li>1 tablespoon red wine vinegar</li>
<li>1-1/2 teaspoons Dijon mustard</li>
<li>1-1/2 teaspoons firmly packed brown sugar</li>
<li>1/2 teaspoon pepper</li>
<li>1/2 teaspoon salt</li>
<li>1 cup pecan halves</li>
<li>3 quarts baby spinach leaves (about 8 oz.), rinsed and crisped</li>
<li>1/2 cup dried cranberries</li>
<li>1 cup crumbled gorgonzola or other blue cheese (4 oz.)</li>
</ul>
<p>1. In a shallow baking pan, bake pecans in a 350° oven until golden in the center (break one to check), 8 to 10 minutes.  Let cool.<br />
2. Put garlic, olive oil, balsamic vinegar, red wine vinegar, mustard, brown sugar, pepper and salt in a glass jar with a screw on lid.  Shake until blended well.<br />
3. Put spinach, cranberries and gorgonzola in a <a href="http://www.amazon.com/gp/product/B001000S8S?ie=UTF8&amp;tag=renegnetwom0b-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B001000S8S">Salad Bowl</a><img style="border:none !important; margin:0px !important;" src="http://www.assoc-amazon.com/e/ir?t=renegnetwom0b-20&amp;l=as2&amp;o=1&amp;a=B001000S8S" border="0" alt=" Cranberry Spinach Salad with Gorgonzola" width="1" height="1" title="Cranberry Spinach Salad with Gorgonzola" />.  Add about 1/2 the dressing; mix gently to coat the leaves.  Add more dressing if needed.</p>
